Mayo does one job: it makes things creamy. Thick curd does that same job, plus tang, plus protein, minus the jar of beige guilt sitting in your fridge door. This is the sandwich for the days you want something that tastes indulgent but doesn't sit like a brick.

Ingredients

  • 1 cup thick curd (yogurt or hung curd)
  • 1/2 cup cucumber, finely chopped
  • 1/2 cup tomato, deseeded and finely chopped
  • 1/2 cup onion, finely chopped
  • 1/2 tsp salt (or to taste)
  • 4 slices of sandwich bread (white or whole wheat)
  • 1โ€“2 tbsp butter or ghee (for toasting)

Instructions

  1. Smooth the curd. Place the curd in a mixing bowl. Using a spoon or whisk, beat it thoroughly until it becomes smooth, velvety, and creamy.
  2. Make the veggie filling. Add the chopped cucumber, tomato, and onion to the creamy curd. Sprinkle in the salt (and black pepper, if using). Mix well until the vegetables are evenly coated.
  3. Assemble the sandwiches. Lay two slices of bread flat. Spoon the yogurt-veggie mix onto both slices and spread it out. Cover each with another slice of bread.
  4. Toast the sandwiches. Heat a pan on medium heat and add a little butter. Put the sandwiches in the pan and cook for 2 to 3 minutes until the bottom is light brown and crunchy. Spread a little butter on top, flip them over, and toast the other side until crispy.
