The Warm, Tangy Potato Salad That Ruined All Others For Me

Every cold, mayo-drenched potato salad I've had since has tasted like a compromise. Once you've had potatoes marinated in spiced yogurt and sautéed with jeera, there's no going back to the picnic-table version that's been sitting out since noon.

Ingredients

Main:

  • 2–3 medium potatoes (boiled, peeled, and cubed)

Spiced yogurt marinade:

  • 1 cup plain yogurt (curd/dahi)
  • ½ tsp turmeric powder
  • ½ tsp red chili powder (adjust to heat preference)
  • ½ tsp coriander powder
  • ½ tsp dry mango powder (amchur)
  • ½ tsp chaat masala
  • Salt to taste

Tempering & finish:

  • 1 tsp cooking oil
  • 1 tsp cumin seeds (jeera)
  • 1 tsp tomato ketchup

Instructions

  1. Boil and prep the potatoes. Boil the potatoes until tender but firm — you want them to keep their shape. Allow them to cool slightly, peel off the skin, and cut into bite-sized cubes.
  2. Whisk the yogurt base. In a large mixing bowl, whisk the plain yogurt thoroughly until smooth and lump-free. Add the turmeric, chili powder, coriander powder, amchur, chaat masala, and salt. Mix well to create a spice paste.
  3. Marinate the potatoes. Add the cubed potatoes to the yogurt mixture. Gently fold with a spoon until every piece is coated. Let it rest for 10–15 minutes so the flavors infuse.
  4. Sauté and cook. Heat 1 teaspoon of oil in a skillet. Add the cumin seeds and let them sizzle for 10–15 seconds until aromatic. Add the marinated potatoes along with all the remaining yogurt sauce into the pan. Cook on low-to-medium heat for about 5 minutes, stirring gently so the yogurt doesn't curdle.
  5. Cool and finish. Remove from heat and let the dish cool to room temperature. Once cooled, stir in the tomato ketchup to balance the tangy and spicy flavors. Serve warm or chilled.
Serve it as a side, a snack, or straight out of the bowl standing at the kitchen counter. No judgment.
